Why do sun-dried coffee beans taste sweeter than washed coffee beans?

Why are sun-dried coffee beans sweeter and more fruity?

When the coffee beans are soaked in water during the washing process, they will mistakenly think that they have come to an environment suitable for growth, so they will start to germinate, causing some chemical changes in the beans to consume sugar.
